Lunar Apogé - Domaine des Carabiniers - Tavel Rosé - Rhone
Tavel is the most renown appellation of rosé in Cotes du Rhone.
It is a rosé of maceration, which mean that the juice is always dark and it will be the literal opposite to Cotes de Provence rosé.
Dark rosé does not mean that the wine will be sweet, actually this rosé is bone dry.
It only means that the skin stayed in contact with the juice for longer, therefore you have more body, more tannins and generally more flavours.
It id more comparable to a light red wine which would need to be chilled.
Domaine des Carabiniers is certified by biodynamic by Demeter.
I would recommend to drink this rosé with some food as roast vegetables or even with meat.
