Here is an excellent introduction to the dry whites of Andalusia. This 'Matalian' cuvée, made from Palomino grapes planted on the albariza soils typical of the Jerez region, stands out for its savoury, mineral and almost physiological palate. Vinified in a tank to preserve maximum freshness, it has a vibrant character, clarity and beautiful rounded volume. An ideal bottle for an aperitif, paired with a selection of fine oysters.
