The Briords parcel sits on the slopes of the Maine, where only three hectares of old vines—over 60 years old—are selected for this cuvée.
Cultivation
The vineyard is farmed using organic and biodynamic methods. Soils are ploughed and harrowed. To protect the vines and strengthen their resilience, we use sulphur, copper, plants, and biodynamic preparations—no synthetic molecules.
Terroir
The subsoil is granitic, composed of Château-Thébaud granite. The soil is free-draining, combining gravel, sand, and clay in ideal proportions.
Winemaking
Harvest is entirely by hand, with grapes transported to the cellar with great care. The pneumatic press fills by gravity; grapes are not crushed. Fermentation occurs naturally in underground vats—without added yeasts or sugar—at 19°C for approximately one month. The wine ages for eight months on its lees without racking, respecting the appellation's ageing requirements.
